One Enchanted Kitchen … with Rachel Hauck

One Enchanted Kitchen

Friends! I’ve been so excited to bring you this fun, weeklong blog series. Some of my favorite author friends are joining me. Here’s the deal:

I’m kind of a fraud.

See, I wrote this Christmas novella, One Enchanted Eve, that released last week . . . and it’s about bakers. Who do lots of baking. Lots of kitcheny things. Lots of things I actually have no idea how to do myself. I mean, I can follow a recipe for the most part and every once in awhile I’ll experiment and get lucky with a culinary creation.

But I’m no Mary Berry. Or Julia Child. Or [insert your Martha Stewart-y reference of choice].

Thankfully, my author friends have got actual kitchen skills! They’ve all also written books that include baking or cooking, restaurants or diners, etc. So they’re joining me this week to share some recipe favorites. They’re also contributing books to the One Enchanted Giveaway. (Details below)

Our first guest is none other than the wonderful, joy-filled, New York Times bestseller Rachel Hauck! Rachel’s latest book, A Royal Christmas Wedding, is included in the giveaway. Check out Rachel’s recipe and then be sure to enter the mega giveaway.

Great Grandma Kirby’s Dinner Rolls

…from Rachel Hauck

How Rachel usually feels about baking 🙂

I love these rolls. They are the right texture of air and dough, and perfect for butter and jelly, or moping up turkey gravy.

You’ll dream of these rolls after you’ve eaten them.

I love this recipe. Not just because it’s yummy but because I grew up eating them at every holiday meal. We didn’t ask my mom, or grandma, if she made a pie or special desert, we asked if she made rolls. A big family dinner or gathering without these rolls was, well, sacrilege! Christmas could be ruined without these rolls!

The recipe began with my great grandma, passed to her daughters, passed to their daughters. In my family even the boys make the recipe.

A personal must have for us is black raspberry jelly. I think these rolls, hot with butter and black raspberry jelly is just a little piece of heaven on earth.

Good food and good tradition. What an unbelievable combination. I make these rolls every Thanksgiving and Christmas, and Easter. Hope you all enjoy them as much as we have over the decades!

Ingredients

1 Pkg Yeast (fresh)
Eggs
Sugar
Salt
Flour
Olive Oil (or melted Crisco)

Instructions

Dissolve the yeast with 2 cups of warm water. Add small scoop of sugar. (1/4 cupish) Mix in one egg. Mix this well

Sift 4-5 cups of flour in separate bowl. Gradually add 3 cups of flour to the yeast mixture. Add a pinch of salt. Mix in the flour well. Add 4 TB of oil and mix well. Add more flour gradually until the dough is stiff. (About 5 cups)

Flour a board or the counter and turn out the dough. Knead the dough, adding a little flour as you do. Knead until the dough is soft and elastic.

Oil a bowl and put the dough in it. Cover and set aside. A warm place is good but do not put on top of warm or heating oven. Let the dough rise until double in size. Punch it down and let it rise again.

When it’s risen again, punch it down and make rolls. To make the rolls, spray a baking dish with Pam. Add a bit of flour if you think the rolls will stick. Oil hands and add a bit of flour. Pinch off about a TB of dough into palm of your hand, then turn in the edges toward the center.

Turn the dough over — it should look round on top — and set in baking dish. Repeat with the dough until gone. Leave room between the dough balls for them to rise. Held: 24

Cover and let rise one more time. If saving over night, let them rise then put them in the refrigerator.

Option: Use two eggs in the mix. Let rise three times before making up the rolls.

Bake at 350 for 20 minutes or until golden brown. (If refrigerated overnight let them warm up before baking.)

When they are done, butter the tops. Rolls should lift easily from the pan.

    1. I read One Enchanted Eve. The book was one of the best I have read. I ended up reading until about 3:30 am because I just couldn’t put it down.

    2. My parents had an older neighbor who made the BEST rolls. I lived a few hours away and she knew I loved her rolls so she brought a pan of them to my mom’s every time she knew I was coming to visit! My mom and Granny made delicious rolls but no one made them as good as Nellie May!

    3. Thanks for your generous giveaway. Enjoy reading books with a cooking theme. Cooking helps me unwind! Not so good at baking. Best wishes!

    4. One of my favorite holiday recipes is Cherries Jubilee. It’s easy to make and oh so good! I guess you could make it anytime of year, but it’s a holiday treat for us.

    5. I love this! All you authors are fun to read. In fact Melissa, I’m currently reading One Enchanted Christmas, so I can then read One Enchanted Eve. I have both! I love your work. The books are so fun!

    6. I love my sister’s buttery pan rolls…we just had them at Thanksgiving at her house in Port Angeles, WA….yum! They are actually a 1980s Sunset Cookbook recipe!

    7. My husband’s aunt makes delicious crescent rolls every Thanksgiving, everyone loves them! I’ll have to try Rachel’s recipe here, we’ve been looking for a tried and true roll recipe!
Thanks for the amazing giveaway, ladies!

      1. Beth,

Make sure the yeast is fresh. AND if you put them in the fridge overnight, don’t let the rolls rise first. Let them rise in the morning. I made that rookie mistake this Thanksgiving! RH 🙂

    8. I loved making Christmas cookies with my mom when I was little. So much fun a such a mess!
Nowadays, I love making tamales with my husbands family Christmas Eve. So much fun with all the girls!

    9. My family has a Swiss bread recipe that we love to make, not only at Christmas but throughout the year. My Swiss grandmother used to make it, and it is delicious.

    10. My favorite thing to bake at Christmas is some orange rolls that we have at breakfast. Sadly, now I’m gluten free and I have not been able to duplicate them.

    11. thank you for such a fun giveaway; I can not turn down chocolate :)The gift card would be great and books to read by the fireplace during our Christmas celebration and cold winter mornings! Merry Christmas ; Jesus is the Reason for the Season…

    12. I started making little peppernut cookies with my daughter at Christmas the year she was two. Now 24 years later, we still make them. They are a lot of work, but it is fun to work together. Sometimes we even get her brother to help. Our extended family has learned to expect them since they are our Christmas tradition. We ONLY make them at Christmas.

    13. I enjoy baking a pineapple pecan cake for my church family. We call it the “house cake”. I’ve not eaten it since I don’t like pineapple.

Thank you for this generous giveaway! Blessings to you and your families.

    14. I loved reading One Enchanted Eve. My favorite holiday recipe is Oostakaka, which is a Swedish dish (like custard but made from milk curds) that we eat with strawberries or raspberries. We only make it on holidays. It was brought over to America by my Great Grandparents.

    15. My must make at Christmas is the easiest recipe ever but always requested by my family.

Spread peanut butter between two Ritz crackers. Dip them in melted chocolate. Let dry on parchment paper lined cookie sheets.

I know you can make these with marshmallow fluff also but my family always wants them made with peanut butter.

    16. What a fun giveaway! I like to make an old-fashioned sour cream cheesecake for special occasions using my grandma’s recipe. Makes me think of her pulling out her old recipe card, especially on holidays.

    17. This recipe sounds so good copied it Thank You. Did you live in Ireland or visit? We Loved it if only they had Nuclear Power for My husbands job we would so be there. Thanks for giving me a chance to win this book.
      Be Blessed!

    18. I am making almond cookies for a cookie exchange this Sunday. Our women’s group is having a Christmas potluck. We find out our secret prayer partners and pick out new ones for next year!

    19. My children enjoy what I call Pecan Balls, but apparently are Danish Wedding Cookies. I’ve been baking these since I was about 13 and never knew the real name until a couple years ago. 🙂

    20. I learned most of my cooking skills from my mom but two things I learned from my grandma. The first was how to make dinner rolls. She helped me make all the silver dollar rolls for my wedding. She also taught me how to make a perfect pie crust. I still do “her” design around the edges of mine!
